Cider Dijon Vinaigrette

Equipment

4+ Cup Food Processor fitted with Blade or an Immersion Blender

(If neither of these are available, a bottle with a tight-fitting lid is fine)

Ingredients

¾ Cup Olive Oil, Extra Virgin Olive Oil or Light Tasting Olive Oil

½ Cup Apple Cider Vinegar (or up to ¾ cup for a tangy dressing)

3 TBSP Sugar-free Dijon Mustard

1 tsp Dried Oregano

½ tsp Garlic Powder

½ tsp Onion Powder

¼ tsp Black Pepper

¼ tsp Red Pepper Flakes (optional)

Process

  1. Add all ingredients except oil into the food processor bowl or container
  2. Blend for 15 seconds
  3. With processor running, slowly drizzle in olive oil
  4. If blender/processor is not available, add all ingredients to a bottle, put on that tight fitting lid & shake vigorously
  5. Use immediately or store in refrigerator for up to one week (contents will start to solidify in refrigerator, so set out a few minutes then shake before use)
