Equipment:
6 or 8 quart Instant Pot or Crock Pot
Cutting Board

Ingredients:
3lbs Bottom Roast, Eye Round or other Roast Cut
1 Medium Onion, julienned
1 TBSP Minced Garlic (about 3 cloves)
1 Jar Sliced Pepperoncini Peppers with Liquid
2 TBSP Olive Oil or Avocado Oil
1 tsp Sea Salt
1 tsp Black Pepper
1 tsp Paprika
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
Pinch Cayenne Pepper (can omit completely or use more if you like the heat)
4 Carrots, peeled & cut into 2-inch sections
1 TBSP Arrowroot or Cornstarch (optional)
Instant Pot Method:
1) In small bowl, mix dry ingredients from Sea Salt through Cayenne
2) Add oil to Instant Pot Bowl and press Sauté
3) Evenly coat roast with the dry ingredient mixture then sear all sides of roast for 1 to 2 minutes
4) Hit cancel, add julienned onions, garlic & entire jar of peppers with liquid, gently mix
5) Cook on high pressure for 60 minutes then quick release & carefully remove lid
6) Flip roast over & cook on high pressure another 45 minutes, quick release, break apart with two forks (If roast does not easily pull apart, cook another 15 minutes on high pressure)
7) Add carrots, cook on high pressure for 1 minute, quick release
8) OPTIONAL STEP: Remove roast, hit the Sauté button then Mix 1 TBSP Arrowroot or Cornstarch with 1 TBSP Cold Water in a small dish & stir almost constantly into the liquid in the Instant Pot until thickened into a gravy, add roast back in then serve!
Crock Pot/Slow Cooker Method:
1) In small bowl, mix dry ingredients from Sea Salt through Cayenne
2) Evenly coat roast with the dry ingredient mixture and add to crock pot
3) Add onions, garlic, carrots & entire jar of peppers with liquid, gently mix
4) Cook on low 8-10 hours or high 4-5 hours, flipping roast over halfway through cooking time
5) Break roast apart with two forks & serve!
6) OPTIONAL STEP: If you want liquid to be more of a gravy consistency, remove roast from crock. Then in small bowl, mix 1 TBSP Arrowroot with 1 TBSP Cold Water, add crock pot liquid to a small saucepan along with arrowroot mixture & simmer until thickened, stirring almost constantly. Pour over roast then serve!
